What is VG-10 metal compared to 440A stainless steel, and 1095 carbon?
I've been reading up on knives and am wondering what metal is used which kind of knives and what the quality of each is. Also, whats another good metal for knives to be made with?
Uh, so... it's hard to answer this question because I don't know what you mean by "quality" here.
VG-10 and 440A are both varieties of stainless steel. 1095 hi-carbon steel is isn't stainless.
Both of the stainless steels will be much harder (and have much better edge retention). They'll also be much, much harder to sharpen and be less likely to take a real razor's-edge finish on them.
VG-10 is, in my experience, virtually impossible to sharpen well at home (so I get mine done professionally). They take a really, really sharp edge and keep it for quite a while (if you're good to it).
440A is a lot cheaper, but it's not really that great. Acceptable, but not ideal.
The carbon steel will be much softer, and more flexible than the stainless steels. You'll have to sharpen and/or hone it much more often. On the bright side, it'll take a razor's edge without that much work. Just be careful to not let it sit out or stay wet for long. Also, they tend to discolor (not that this affects their performance at all)
